For the cake base:

3 egg yolks

30 g sugar

250 g wheat flour (type 405)

1 tsp baking powder

pinch of salt

90 g soft butter

For the cream filling:

3 egg whites

30 g sugar

1 tsp vanilla extract or vanilla sugar

30 g cornstarch

400 g sour cream or plain yogurt

For the apple topping:

3–4 medium apples

about 2 tbsp butter for frying

15 g brown sugar

juice of 1 lemon

For the streusel (crumb topping):

125 g flour

60 g sugar

75 g cold butter, cubed

½ tsp cinnamon (optional)

For serving (optional):

powdered sugar for dusting

whipped cream
