Ingredients:
– 1 cup fresh spinach, chopped
– 1 small onion, chopped
– 1 cup feta cheese, crumbled
– 4 large eggs
– 1 cup milk
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon nutmeg
– 1 tablespoon olive oil
Directions:
1. Preheat the oven to 350°F (175°C).
2. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the spinach and cook until wilted.
3. In a mixing bowl, whisk together eggs, milk, salt, pepper, and nutmeg.
4. Stir in the cooked spinach and onion mixture, along with the crumbled feta cheese.
5. Pour the mixture into a greased pie dish.
6. Bake for 30-35 minutes or until set and lightly golden on top.
7. Let it cool for a few minutes before slicing and serving.
