Instructions
1. Make the Balsamic Glaze:

In a small saucepan over medium heat, combine balsamic vinegar and brown sugar. Stir until the sugar dissolves.

Remove from heat and let cool—it will continue to thicken as it cools.
2. Prepare the Caprese Filling:

In a mixing bowl, combine cherry tomatoes, mozzarella, chopped basil, and olive oil. Toss gently.

Season with salt and pepper to taste.
3. Assemble the Stuffed Avocados:

Cut the avocados in half and remove the pits.

Spoon the Caprese mixture into the center of each avocado half.

Garnish with extra basil leaves and a pinch of salt and pepper if desired.
4. Serve & Enjoy!
