Instructions:

  1. Cook the Noodles:
    • Boil water for noodles and cook according to package instructions. Drain and set aside.
  2. Sauté Aromatics:
    • While noodles are cooking, sauté onions in a large pot over medium heat for about 5 minutes.
    • Add curry paste, garlic, and ginger. Cook for another minute until fragrant.
  3. Add Liquids:
    • Pour in water, chicken broth, and lime juice. Bring to a boil.
  4. Simmer:
    • Add coconut milk and shredded chicken. Reduce heat to medium-low and let it simmer for 10 minutes.
  5. Add Herbs:
    • Stir in fresh basil, cilantro, and scallions. Season with salt and pepper to taste.
  6. Serve:
    • Place noodles in a bowl and ladle soup over them.
    • Top with additional cilantro, scallions, and lime wedges for extra flavor.

Tips:

  • For added flavor, consider adding lemongrass and galangal, or 2-3 tablespoons of fish sauce to give it a Tom Kha twist.
  • Store noodles and soup separately to keep leftovers fresh longer.
