Creamy Mushroom Chicken and Wild Rice Soup

Ingredients

  • 3 tablespoons butter, divided
  • 1 pound mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)
  • 6 cups chicken broth
  • 1 cup wild rice (or a wild rice blend)
  • 1 ½ cups cooked chicken, diced or shredded
  • 1 cup milk or cream
  • 1 cup grated Parmigiano Reggiano (Parmesan)
  • Salt and pepper, to taste

Optional Add-Ins:

  • 1 ounce dried mushrooms, soaked in 1 cup hot water for 20 minutes (reserve soaking liquid)
  • 2 tablespoons white miso paste (adds umami depth)
