👩‍🍳 Instructions

1. Make the Pastry

  • In a bowl, mix flour and salt.
  • Rub in chilled butter until mixture resembles coarse crumbs.
  • Add cold water gradually until dough forms.
  • Shape into a ball, wrap, and chill for 30 minutes.

2. Prepare the Filling

  • Cook minced beef and onion in a skillet over medium heat until browned and soft.
  • Season with salt and pepper.
  • Stir in suet if using. Let cool.

3. Assemble the Bridies

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment.
  • Divide dough and roll into circles.
  • Spoon filling onto one half of each circle.

4. Shape & Seal

  • Fold pastry over filling to form a semi-circle.
  • Crimp edges with a fork to seal.
  • Optional: Brush tops with egg wash for shine.

5. Bake

  • Bake for 25–30 minutes, until golden and flaky.

6. Serve Warm

  • Enjoy as-is or with mashed potatoes and gravy for a traditional touch.
