1. Make the Pastry
- In a bowl, mix flour and salt.
- Rub in chilled butter until mixture resembles coarse crumbs.
- Add cold water gradually until dough forms.
- Shape into a ball, wrap, and chill for 30 minutes.
2. Prepare the Filling
- Cook minced beef and onion in a skillet over medium heat until browned and soft.
- Season with salt and pepper.
- Stir in suet if using. Let cool.
3. Assemble the Bridies
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment.
- Divide dough and roll into circles.
- Spoon filling onto one half of each circle.
4. Shape & Seal
- Fold pastry over filling to form a semi-circle.
- Crimp edges with a fork to seal.
- Optional: Brush tops with egg wash for shine.
5. Bake
- Bake for 25–30 minutes, until golden and flaky.
6. Serve Warm
- Enjoy as-is or with mashed potatoes and gravy for a traditional touch.

- Vegetarian version: Use lentils, mushrooms, and herbs instead of beef.
