  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 2 tbsp all-purpose flour

  • 2 cups beef broth (or 2 cups water + 1 beef bouillon cube)

  • 1 tbsp Worcestershire sauce

  • 1 tsp soy sauce (optional, for umami)

  • 1/2 tsp dried thyme (optional)

  • Salt and freshly ground black pepper, to taste

  • 1 tbsp olive oil or butter (if using very lean beef)
