Homemade Turkey Soup Recipe

Instructions:

  1. Prepare the Broth:
    • In a large pot, place the turkey carcass and pour in the broth. Add water if needed to fully submerge the bones.
    • Bring to a boil over medium heat, then reduce to a low simmer. Let it cook for 1 hour, skimming off any foam or impurities.
  2. Strain & Enhance the Broth:
    • Remove and discard the carcass. Strain the broth through a fine-mesh sieve to remove any small bones or particles. Return the clear broth to the pot.
  3. Add Vegetables & Seasonings:
    • Stir in the onion, carrots, celery, garlic, bay leaf, thyme, salt, and pepper.
    • Simmer over medium heat for 20 minutes, or until the vegetables are tender.
  4. Finish the Soup:
    • Add the cooked turkey and frozen peas. Simmer for another 10 minutes until everything is heated through.
    • Taste and adjust seasoning if needed. Remove the bay leaf.
  5. Serve & Enjoy:
    • Ladle into bowls, garnish with fresh parsley, and serve hot.
