Instructions

1. Combine the Base:
In a large bowl, mix the leftover stuffing, turkey, cranberry sauce, and grated cheese. Gradually add the gravy or broth, mixing until the mixture is moist and holds together easily when pressed. If it’s too dry, add a bit more broth; if too wet, a sprinkle of breadcrumbs will help.

2. Form the Balls:
Using your hands or a cookie scoop, form the mixture into firm, golf-ball-sized spheres. Place them on a parchment-lined baking sheet.

3. Bread the Balls:
Set up three shallow dishes: one with flour, one with the beaten eggs, and one with breadcrumbs. Roll each ball first in flour, then dip thoroughly in the egg, and finally coat evenly in breadcrumbs, gently pressing to adhere. Return the coated balls to the baking sheet.

4. Chill:
Refrigerate the balls for 15-20 minutes. This crucial step helps them firm up and prevents them from breaking apart during cooking.

5. Cook (Choose Your Method):

  • To Pan-Fry (for maximum crispness):
Heat 2 inches of oil in a heavy-bottomed pot to 350°F (175°C). Fry the balls in batches for 3-4 minutes, turning occasionally, until deeply golden brown. Remove with a slotted spoon and drain on a paper towel-lined plate.

  • To Bake (a hands-off approach):
Preheat your oven to 400°F (200°C). Arrange the balls on a greased baking sheet, lightly spray with cooking oil, and bake for 20-25 minutes, or until golden and heated through.

  • To Air Fry (a healthier option):
Preheat air fryer to 375°F (190°C). Arrange balls in a single layer in the basket (work in batches). Spray lightly with oil and cook for 10-12 minutes, shaking halfway through, until crispy.

6. Serve and Enjoy:
Serve the stuffing balls immediately while hot and crispy. Garnish with chopped parsley and offer plenty of turkey gravy, cranberry sauce, or your favorite dipping sauce on the side.

Chef’s Notes

  • Stuffing Consistency: Both fresh and drier leftover stuffing work well. The gravy or broth will help bring it all together.

  • Make Them Your Own: Stir in sautéed onions, celery, herbs, or even a spoonful of mashed potatoes for a new twist.

  • Make-Ahead Magic: These are perfect for prepping ahead! After breading, freeze the balls solid on a baking sheet, then transfer to a freezer bag. Cook from frozen, adding a few extra minutes to the cooking time.

Enjoy your delicious and creative leftover remake
