Ingredients
* 4 apples (cored)
* 1 cup pumpkin puree
* 1/2 teaspoon cinnamon
* 1/4 teaspoon nutmeg
* 1/4 teaspoon ginger
* 1/4 cup brown sugar
Instructions
1- Preheat your oven to 350°F (175°C).
2- In a bowl, mix together the pumpkin puree, cinnamon, nutmeg, ginger, and brown sugar until well combined.
3- Carefully stuff each cored apple with the pumpkin mixture, pressing down slightly to fill them well.
4- Place the stuffed apples in a baking dish and cover with aluminum foil.
5- Bake for 20-25 minutes, or until the apples are tender but still hold their shape.
6- Remove from the oven and let cool slightly before serving.
