Roasted Parmesan Creamed Onions

  1. Preheat Oven & Prep Onions: Preheat your oven to 375°F (190°C). Carefully place the 4 peeled and sliced onions into a parchment-lined baking dish, keeping the rings intact and together. Drizzle the 3 tablespoons of olive oil over the onions and season with salt and pepper to taste.
  2. Make the Cream Sauce: While the onions are roasting, place the 1 cup of heavy cream and ¼ cup of white wine into a saucepan on the stove. Heat the mixture until the cream begins to simmer around the edges. Once it simmers, remove the saucepan from the heat and set it aside.
  3. Roast the Onions: Place the baking dish with the onions in the preheated oven and roast for about 20 minutes, or until they are soft and beginning to turn golden.
  4. Combine & Finish Baking: Remove the onions from the oven. Slowly and carefully pour the cream mixture over the onions and sprinkle with the ¼ cup of grated Parmesan cheese. Cover the baking dish tightly with foil and return to the oven. Bake for another 20 minutesRemove the foil and roast for an additional 5 minutes to allow the onions to brown and caramelize further.
  5. Serve: Remove from the oven and serve immediately.
