Instructions:

  1. Prep the Peppers:
    • Preheat your oven to 200°C (400°F).
    • Lightly grease a baking dish and place the poblano pepper halves in it, cut side up.
  2. Cook the Filling:
    • Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until softened.
    • Add the ground beef (or turkey) and cook until browned, breaking it into small pieces with a spoon. Drain any excess fat if needed.
    • Stir in the diced tomato, tomato paste, cooked rice, black beans (if using), cumin, smoked paprika, chili powder, salt, and pepper. Mix well and let it simmer for 5 minutes to combine the flavors.
  3. Stuff the Peppers:
    • Spoon the filling evenly into each poblano pepper half, pressing gently to pack it in.
    • Top each pepper with a generous amount of shredded cheese.
  4. Bake:
    • Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the peppers are tender.
  5. Serve:
    • Remove from the oven and let cool slightly. Serve hot, garnished with sour cream, fresh cilantro, guacamole, or a drizzle of hot sauce for an extra kick.

Tips:

  • For a spicier version, add diced jalapeños or a dash of hot sauce to the filling.
  • If you prefer a vegetarian option, replace the meat with extra beans, lentils, or a plant-based ground meat substitute.
  • These stuffed peppers pair perfectly with a side of Mexican rice or a fresh salad.

Enjoy your flavorful stuffed poblano peppers! 😋
