Instructions

  1. Brown the Beef:
    • Heat 1 Tbsp olive oil in a large pot over medium-high heat.
    • Season beef with salt and pepper, brown in batches, then transfer to a plate.
  2. Sauté Vegetables:
    • Add 1 Tbsp oil to the pot, sauté onions, carrots, and celery for 3 minutes, then add garlic and sauté for 1 minute more.
  3. Simmer:
    • Add broth, tomatoes, browned beef, basil, oregano, thyme, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.
  4. Add Potatoes and Green Beans:
    • Add potatoes and green beans, simmer covered for 20 minutes.
  5. Finish the Soup:
    • Stir in corn and peas, simmer for 5 minutes. Add parsley and serve warm.
