- 8 cups turkey or chicken broth (plus water as needed)
- 1 medium onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 tsp dried thyme
- Salt and black pepper, to taste
- 2 cups cooked turkey, shredded or chopped
- 1 cup frozen peas
- Fresh parsley, chopped (for garnish)
